Roasted Pumpkin & Bacon Dip

Ingredients
- 15 oz can Queso Blanco Cheese Sauce (as directed on can)
- 2 munchkin pumpkins
- 2 cups chicken stock
- 4 strips bacon, cooked and chopped
- 1 tsp pumpkin pie spice
- 2 tsp butter
- 1 tsp salt
Instructions
- Cut top off pumpkins and dig out seeds and pulp
- Place pumpkins in a baking dish, put 1 tsp butter,
½ cup stock, ½ the salt, and ½ spice in each - Pour the remainder of stock in bottom of dish
- Roast in a 350 °F oven until tender
- Cool slightly and scoop out some of the meat of the pumpkin, make sure the sides are still ridged
- Mix pumpkin with cheese and divide up between the pumpkins
- Bake for another 15 minutes until hot
- Top with bacon and enjoy with some Ricos Original Nacho Chips!
