Roasted Pumpkin & Bacon Dip

Ingredients

  • 15 oz can Queso Blanco Cheese Sauce (as directed on can)
  • 2 munchkin pumpkins
  • 2 cups chicken stock
  • 4 strips bacon, cooked and chopped
  • 1 tsp pumpkin pie spice
  • 2 tsp butter
  • 1 tsp salt

Instructions

  • Cut top off pumpkins and dig out seeds and pulp
  • Place pumpkins in a baking dish, put 1 tsp butter,
    ½ cup stock, ½ the salt, and ½ spice in each
  • Pour the remainder of stock in bottom of dish
  • Roast in a 350 °F oven until tender
  • Cool slightly and scoop out some of the meat of the pumpkin, make sure the sides are still ridged
  • Mix pumpkin with cheese and divide up between the pumpkins
  • Bake for another 15 minutes until hot
  • Top with bacon and enjoy with some Ricos Original Nacho Chips!
