Papas con Chorizo

Ingredients
- 1 Ricos Nacho Cheese Sauce 3.5 oz cup
- ¼ cup Ricos Pickled Jalapeño Slices
- 2 Yukon potatoes, peeled, diced
- 6 oz your favorite chorizo (uncooked)
- Olive oil to coat potatoes
- ¼ cup cilantro, chopped
- Salt and pepper to taste
Instructions
- Cut potatoes and place in a medium mixing bowl. Drizzle with olive oil and sprinkle with salt and pepper. Toss to combine and coat in oil and seasonings
- Transfer potatoes to your air fryer basket in a single layer and air fry at 400˚F for 18–20 minutes, flipping and tossing halfway
- Air fry until potatoes are golden brown and crisp on the outside and tender when pierced with a fork
- While potatoes are cooking heat a medium sauté pan. Coat the bottom with a small amount of oil and cook the chorizo
- When chorizo is finished, soak up most of the oil with paper towels
- Toss the potatoes with the chorizo and cilantro
- Drizzle with Ricos cheese and jalapeños
